I haven't made this cake in ages, but I 'm so excited I found this recipe again.
Laisy Daisy Cake
1 1/4 cups boiling water
1 cup oats
1 3/4 cups all purpose flour
1 tsp baking soda
1 tsp cinnamon
dash of salt
1/4 tsp nutmeg
1 cup sugar
1 cup firmly packed brown sugar
1/3 cup margarine
2 egg whites or 1 egg
1 tsp vanilla
Topping:
1/2 cup coconut
1/2 cup packed brown sugar
1/2 cup oats
3 Tbs milk
2 Tbs margarine, melted
Heat oven to 350 degrees. Lightly grease and flour an 8 or 9 inch square pan.
In a small bowl add boiling water and oats, stir and set aside. In a large bowl beat the sugars and margarine until well blended. Add egg whites and vanilla, beat well. Add dry ingredients and oat mixture.
Pour batter into pan and bake 55-65 minutes for an 8 inch pan or 50 - 60 for a 9 inch pan, until a wooden toothpick inserted in center comes out with only a few moist crumbs on it.
In a small bowl combine all the topping ingredients; mix well. Spread over the top of HOT cake. Broil about 4 inches from heat, 1-2 minutes or just until topping is bubbly. Cool completely.

We still love that cake, but for some reason don't make it very often. Do you have your recipes in a box or a notebook type thingy? Just curious...
Ahhh, the good old days. Remember Angela always trying to get a dinner invite to your house?
My recipes are kind of all over, but I'm trying to put them all into a little cookbook that holds recipe cards, that's how I've found some of these.
We made this not very long ago, and took it to a bluegrass jam session. I now make everything in mass quantites (I quadrupled the recipe) and bake it in disposable aluminum pans. It was a hit, and we didn't bring any of it home!
