Banana Snack Cake

Janet said that I needed to post this recipe, which I love to make when I need a sweet fix but want something at least a little better for you!

1 cup margarine, softened
1 cup sugar
2 eggs
1/2 cup buttermilk ( my family actually uses 1 cup of milk with 1 tablespoon vinegar)
1 cup bananas, mashed
1 teaspoon vanilla
2 cups flour (I have also used 1 1/2 cups flour and 1/2 cup wheat flour)
1 cups oats
1 1/2 tsp soda
1/2 tsp salt
1 cup chocolate chips
1/2 cup nuts

Heat oven to 350 degrees. Grease 9x13 pan. In a large bowl, combine margarine, sugar and eggs; mix well. Stir in buttermilk, bananas and vanilla; blend thoroughly. Stir in flour, oats, soda and salt; mix well. Stir in chips and nuts.

Bake 30 - 35 minutes or until a toothpick comes out clean.

Peanut Butter Frosting? I'm sure I remember this cake came with peanut butter frosting. Even though Jake can't eat it the rest of us can. Don't fail me in my hour of need... or I'll have to call to get the peanut butter frosting recipe! Thanks! :-)

Eew I've never put peanut butter frosting on this. Actually I've never had any frosting on it. It might actually get to sweet. But I did just make it in my silicone muffin pans, worked great and the little cakes were really cute, with just a dolop of cool whip or whipped cream in top.

hmmmm, so what kind of frosting do you put on it? You realize this is just academic curiousity since all I will ever eat of this cake is it's frosting.
